Queso Valdeón cheese is a spectacular blue cheese made in the Valdeón Valley, located in the heart of the Picos de Europa on the Leonese side, Castille and Leon. It is a blue-veined cheese, made all year round with cow's and goat's milk. It is matured for a long time, until it reaches a point between semi-cured and cured.
The rind is rough and irregular, with dark grey tones and small red and bluish spots. The paste has a soft texture and a pale yellow colour, full of small cavities where white and blue-green mould is concentrated.
Its taste is intense, salty and spicy, more pronounced when the ripening time is longer. Good persistence of flavours.
The leaves are the traditional wrapping that does not affect the ripening of the cheese. The leaves that cover this cheese were used in the past to protect the cheeses and prevent them from staining the cheese bag. They were used for transport when the cheese was brought down from the caves.
