Semi-cured cheese with a mild flavour, milky notes and a pleasant taste of nuts and butter. Aftertaste and great smell of smoked birch.
This cheese is characterised by its pyramidal shape and by the birchwood smoking process it undergoes during production. The choice of birch wood is due to the fact that in the Villalba region there is a long tradition of making clogs, footwear made from the same wood. The shavings obtained from the manufacture of the footwear are then used to smoke the cheeses.
