Pedrosillano chikpeas from Salamanca are a small, rounded chickpea characterised by its very marked cotyledons and pointed beak. The colour of this chickpea is light brown, orangey with slightly marked wrinkles.
It is the smallest of all the chickpea varieties and one of the most appreciated for its buttery and intense flavour. Once cooked, the 'garbanzo pedrosillano' chickpeas keep their shape perfectly and their skin does not peel, which makes them very pleasant to eat. The water absorption capacity of Pedrosillano chickpeas is more than 100% in relation to their weight.
The production area of this chickpea is located in the province of Salamanca, where the pedrosillano chickpea originates. The name of the variety (pedrosillano) comes from the similarity with the name of the town from which it originates: Pedrosillo el Ralo, a municipality in the Salamanca region of La Armuña.
