200 gr wedge of Parra Jiménez Organic Manchego cured sheep´s cheese DOP, curado, from the town of Las Mesas (Cuenca), Castilla- La Mancha. In vacuum-sealed packaging.
From the small livestock farm of Hermanos Parra Jiménez, in the heart of La Mancha and with the aim of recovering the native breed of Manchega black sheep, currently in danger of extinction, this D.O. Manchego cheese with organic certification is made in a totally artisan and traditional way, resulting in a pressed cheese with a compact texture and characteristic flavour of this peculiar region. This is undoubtedly the result of the efforts made to recover the livestock of this region and respect for the environment.
Tasting notes: Medium-high intensity aroma. Clean and balanced. Sweet notes of biscuit and its rind reminds us of clean leather. Hard texture but with good butteriness. Fine-grained, oily on the palate and good solubility in the mouth. Intense and very persistent flavour, smooth and well-integrated acidity. Sweet notes of pastry and clean leather. Subtle spicy aftertaste, elegant and balanced on a pleasant spicy background.
