Odre is the mildest sheep's milk cheese, handmade in Catalonia. Pasteurized sheep’s milk cheese from the Can Pujol cheese factory in Vilassar de Dalt (El Maresme).
Cylindrical shape, with the upper face slightly convex. Bark white and flowery, velvety, regular and continuous. The cut has an ivory appearance, with a defined ring under the bark, and a cohesive and moist paste. The smell is of medium intensity, wood and moisture predominate, with notes of sheep's milk and grass, or mushroom and natural cava depending on the time of year. On the palate it allows you to notice a soft and unctuous texture, cohesive, leaving acidic and animal sensations, of medium intensity, of raw nuts, with a predominance of a pleasant bitterness in the aroma and aftertaste.
Cheese of personal taste, defined, balanced between the primary sensations (acidity, milk) and those derived from a maturation appropriate to the time of maturation (bitter, unctuous texture), with a medium intensity, which prolongs the taste in the mouth.
